Easy Recipes Everyone Will Love

Easy blueberry oatmeal muffins

Ingredients:

  • 2 ½ cups of oats
  • 3 eggs
  • 3 ripe bananas
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup blueberries

Directions:

  • Preheat oven to 400 F.
  • Add all ingredients into large bowl and mix together until well combined.
  • Add muffin mixture into lined muffin tins and bake for 18 minutes.
  • Remove from oven and allow to cool for 5 minutes.

Makes 12 muffins

Nutritional analysis: calories 110, fat 2g, carbohydrates 20g, fiber 3g, protein 4g 


Homemade garlic hummus

Ingredients:

  • 2 cups chickpeas
  • 2 tablespoons tahini
  • 2 garlic cloves, crushed
  • 1 lemon, juiced
  • ¼ cup extra virgin olive oil
  • Pinch of sea salt
  • Pinch of paprika

Directions:

  • Place chickpeas, tahini, garlic, lemon juice, olive oil and sea salt in a food processor and process until combined and smooth.
  • Sprinkle with paprika to serve.

Serves 14

Nutritional analysis: calories 150, fat 7g, carbohydrates 18g, fiber 5g, protein 6g 


Crispy Chicken Fingers 
Ingredients:

  • 1 cup spelt or whole wheat bread crumbs
  • 1 cup parmesan cheese, grated
  • 1 tablespoon garlic powder
  • 1 teaspoon sea salt
  • 2 egg whites
  • 4 boneless, skinless chicken breasts cut into 1” thick pieces

Directions:

  • In a medium size bowl, combine breadcrumbs, grated Parmesan, garlic powder and sea salt. Stir until well combined.
  • In a separate bowl, beat 2 egg whites until combined.
  • Dip chicken fingers one by one into the egg mixture and then roll them in the breadcrumb mixture.
  • Place breaded fingers on a baking sheet lined with parchment paper
  • Bake at 400 degrees, turning after 15 minutes and baking another 10 minutes till golden and crispy.

Serves 4

Nutritional analysis: calories 330, fat 10g, carbohydrates 22g, fiber 1g, protein 36g


Broccoli and chickpea salad 
Ingredients:

  • 1 head broccoli, cut into florets
  • 1-14oz can of chickpeas, rinsed well and drained
  • ½ cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 3 celery stalks, chopped
  • 2 tablespoon extra virgin olive oil
  • ½ teaspoon sea salt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon grainy mustard
  • 1 tablespoon white wine vinegar

Directions:

  • In large bowl, add broccoli, chickpeas, tomatoes, cucumber and celery.
  • In a small mixing bowl, add olive oil, se salt, Dijon mustard, grainy mustard, and white wine vinegar.
  • Add dressing into salad and toss well to coat.

Serves 4

Nutritional analysis: calories 240, fat 9g, carbohydrates 35g, fiber 7g, protein 8g
