Delicious Summer Recipes

Refreshing summer peach smoothie

Ingredients:

  • 1 scoop of vanilla protein powder
  • 1 tablespoon unflavoured 2% Greek yogurt
  • ½ cup frozen peaches
  • 1 tablespoon chia seeds
  • 1 cup of baby spinach
  • 1 cup of unsweetened coconut milk (or almond milk)

Directions:

  1. Add all ingredients into blender and blend on high for 60 seconds. Enjoy!

Serves 1

Nutritional analysis: calories 380, fat 20g, carbohydrates 30g, fiber 14g, protein 33g


Caesar vinaigrette

Ingredients:

  • 1 clove of garlic, crushed
  • 2 teaspoon Dijon mustard
  • ¼ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon Worcester sauce
  • 1 egg yolk
  • 2 tablespoon fresh lemon juice
  • 1 tablespoon white wine vinegar
  • ½ cup of extra virgin olive oil

Directions:

  1. Put all ingredients into a blender and blend on high until smooth and creamy.

Makes 1 cup

Nutritional analysis (per 1 tablespoon): calories 59, fat 7g, carbohydrates 1g


Quick and easy Greek salad

Ingredients:

  • 1 cucumber, cut into 1 inch cubes
  • 6 tomatoes, chopped
  • ½ red onion, diced
  • ½ cup black olives, no pits
  • ½ cup extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • ¼ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • 2 teaspoons dried oregano leaves
  • ½ cup feta cheese, crumbled

Directions:

  1. Add cucumber, tomatoes, red onions and black olives into serving bowl.
  2. In a separate small bowl, combine olive oil, lemon juice, sea salt, pepper and oregano. Mix to combine.
  3. Pour dressing over salad and toss to coat.
  4. Sprinkle with cheese and enjoy!

Serves 8

Nutritional analysis: calories 170, fat 16g, carbohydrates 7g, fiber 2g, protein 3g
 


Raspberry coconut chia seed pudding pops

Ingredients:

  • 1 cup unsweetened almond milk
  • 1 cup raspberries
  • 2 tablespoon chia seeds
  • 1 tablespoon unsweetened shredded coconut flakes
  • 1 teaspoon honey

Directions:

  1. Combine all ingredients into a container and mix well. Store on counter or in fridge for up to an hour, until chia seeds begin to absorb the coconut milk.
  2. Pour mixture into molds and put in freezer overnight, or until frozen.

Serves 6

Nutritional analysis: calories 90, fat 5g, carbohydrates 8g, fiber 5g, protein 2g
