TASTY AND NUTRITIOUS RECIPES

Chocolate avocado mousse

Ingredients:

  • 1/4 cup raw honey, organic maple syrup or brown rice syrup
  • 2 ripe avocados
  • 1 teaspoon vanilla extract
  • 1/2 cup raw cocoa powder
  • Pinch of sea salt and cinnamon

Directions:

Combine all the ingredients in a blender or food processor by adding the honey first, followed by the avocado, vanilla and cocoa.
Blend or process for about 30 seconds until smooth and creamy.
Add a splash of water or coconut water to make a lighter mousse.
Taste and adjust sweetness if needed.
Spoon into a bowl and allow to set in fridge until cool. 
Serves 10

Nutritional Analysis: 119 calories, 8g fat, 12g carbohydrates, 4g fiber, 7g sugar, 2g protei

Black bean brownies

Ingredients:

  • 1 (15-ounce) can no-salt-added black beans, drained and rinse
  • 3 large eggs
  • 1/3 cup melted butter or coconut oil, extra for the baking dish
  • ? cup cocoa powder
  • 1/8 teaspoon salt
  • 2 teaspoon vanilla extract
  • ? cup plus 2 tablespoons coconut sugar
  • ? cup semi-sweet chocolate chips
  • 1/3 cup finely chopped walnuts (optional)

Directions:

Preheat oven to 350°F. 
Butter an 8-inch baking pan. Place the black beans, eggs, melted butter, cocoa powder, salt, vanilla, and sugar in the bowl of a food processor and blend until smooth. Remove the blade and carefully stir in the chocolate chips and walnuts. Transfer mixture to the prepared pan. 
Bake the brownies for 30 to 35 minutes, or until just set in the center. Cool before cutting into squares. 
Makes 20-25 brownies

Nutritional Analysis: 138 calories, 5.4g fat, 18g carbohydrates, 3.1g fiber, 7g sugar, 5.3g protein

Avocado toast

Ingredients:

  • 1 ripe avocado
  • 1 Tbsp extra virgin olive oil
  • 1 lemon
  • 2 slices of high fiber bread
  • Chili flakes, to taste
  • Sea salt, to taste

Directions:

Mash the avocado, leaving some chunks. Add olive oil and lemon juice. 
Spread onto two slices of toast and sprinkle with chili flakes and sea salt
Tip: to increase the protein to make a complete meal, add a hard boiled egg on the side or sliced on top 
Serves 2

Nutritional Analysis: 260 calories, 19g fat, 8.6g carbohydrates, 6.7g fiber, 2g protein 

Date and cacao truffles

Ingredients:

  • ? cup pitted prunes
  • ? cup pitted dates
  • 3 Tbsp almond butter
  • 1 Tbsp maple syrup
  • 3 Tbsp unsweetened cocoa
  • ? cup finely grated unsweetened coconut

Directions:

In food processor drop prunes and dates through the feed hole one by one. Scrape the processor bowl and run until the prunes and dates are smooth.
Add remaining ingredients except for the coconut. Run until smooth and scrape bowl as needed.
Roll the mixture into 12 one-inch balls and roll in coconut (or crushed almonds) to coat. Refrigerate at least 30 minutes. 
Makes 12 balls

Nutritional Analysis: 72 calories, 3.6g fat, 10.4g carbohydrates, 2g fiber, 6.3g sugar, 1.5g protein

Refreshing and detoxifying grapefruit and cucumber smoothie

Ingredients:

  • 2-3 Tbsp hemp hearts or 1 scoop of sprouted protein powder
  • 1 small cucumber
  • ? cup freshly squeezed grapefruit juice
  • ? freshly juiced lemon
  • 1 inch piece of ginger
  • ? cup coconut water
  • ? cup filtered water
  • Ice cubes

Directions:

Blend all ingredients and enjoy! 
Serves 1

Nutritional Analysis: 275 calories, 13g fat, 20g carbohydrates, 7g fiber, 10g sugar, 13g protein
