Reverse prayer pose. Why am I showing you this picture of reverse prayer pose? Well... two weeks ago my sister mentioned this pose and my response was -"Oh...that is not a pose I can do - I just skip it because my shoulders are tight." The second I said that - I knew I was in for it. Her immediate response "That is not okay JJ (my nickname) and we are fixing this like now".

My entire life she has this gentle yet effective way to push me to do more. So with some breath work my sister taught me, along with diligent morning practice, a miracle has happened! Each and every day I can feel my fingers crawl up my back a little bit more. This may not be shocking to you - but I literally could not touch my hands together just a short time ago.

DELICIOUS SUMMER RECIPES

Roasted veggie dip

Ingredients:

  • 1 medium eggplant-peeled and coarsely chopped into 1? cubes
  • 2 red peppers, seeded and coarsely chopped into 1? cubes
  • 1 red onion, peeled and coarsely chopped
  • 2 cloves garlic peeled
  • 1 tablespoon olive oil
  • Pinch sea salt, ground black pepper
  • 1 tablespoon tomato paste

Directions:

Preheat oven to 400 degrees F. 
Combine chopped eggplant, peppers, onion and garlic in a bowl and toss with olive oil and salt and pepper. 
Spread on a baking sheet and roast for 45 min tossing once half way through baking. 
Cool slightly then place veggies in a food processor and pulse 3 or 4 times-mixture should have a slightly chunky texture. 
Serves 4

Nutritional Analysis: calories 84, fat 4g, carbohydrates 12g, fiber 5g, protein 2g


Peaches and cream popsicles

Ingredients:

  • 1 cup ripe peaches
  • 1/8 cup agave
  • 1 cup 2% Greek yogurt
  • 3 tablespoons filtered water

Directions:

Add all ingredients into a blender and blend until smooth
Once blended, add into 6 popsicle molds and freeze overnight.

Serves 6

Nutritional Analysis: calories 83, fat 1g, carbohydrates 11g, protein 7g 


Refreshing coconut smoothie

Ingredients:

  • ½ banana
  • ½ cup frozen mango
  • 1 cup unsweetened coconut milk
  • 3 tablespoons hemp hearts
  • Shredded coconut

Directions:

Place all ingredients, except shredded coconut, in blender and blend on high until smooth
Sprinkle shredded coconut on top of smoothie and enjoy!

Black bean burgers

Ingredients:

  • ½ cup onion, diced
  • 1 large garlic clove, minced
  • 2 eggs, beaten
  • 1 cup brown rice or quinoa flour
  • 1 cup grated carrots
  • 1 cup cooked black beans, roughly pureed or mashed
  • ½ cup finely chopped parsley
  • 1/3 cup almonds, grated or finely chopped
  • ½ cup sunflower seeds
  • 1 tablespoon extra virgin olive oil
  • 1 ½ teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste

Directions:

Preheat oven to 350F. In large a skillet, sauté onions and garlic in ½ tbsp oil. Mix your flax egg together in a large bowl and set aside for at least 10 minutes while you prepare the rest of ingredients.
Add all ingredients (except spices and salt) to the egg and stir very well. Add seasoning and salt to taste.
With slightly wet hands, shape dough into patties. Pack dough tightly as this will help it stick together. Makes 12 small patties.
Bake for 25-30 minutes (15-17 minutes on each side) at 350F, until golden and crisp.

Makes 8 patties
