I recently watched the movie Wonder. Based on the New York Times bestseller, Wonder tells the incredibly inspiring and heartwarming story of August Pullman, a boy with facial differences who enters fifth grade, attending a mainstream elementary school for the first time. One of my favorite lines from the movie was, “You can’t blend in when you were born to stand out.”

This really does apply to all of us. We were all made to stand out, thrive, contribute and feel our best. While I realize nutrition and feeling good isn’t everything – it definitely affects the way you feel about yourself – mood, energy, vitality and confidence. It all goes back to what nutritional pioneer Adele Davis once spoke, “We are indeed much more than we eat, but what we eat can help us to become much more than whom we are”. Eat better, do better- that I know for sure.

Healthy & Delicious Fall Inspired Recipes

Warming fall smoothie

Ingredients:

  • 1 scoop chocolate or unflavored protein powder
  • ½ banana, frozen
  • 1 tablespoon chia seeds
  • 1 cup unsweetened almond milk
  • 1 inch piece of fresh ginger
  • 1 teaspoon cinnamon
  • 1 tablespoon pumpkin seed butter
  • 1 teaspoon unsweetened cocoa powder (optional)
  • 3-4 ice cubes

Directions:

  1. Add all ingredients into blender and blend on high until smooth and creamy. Add water if you would like to change the texture of your smoothie (water will make it less thick).

Serves 1

Homemade bone broth

Ingredients:

  • 2-3 pounds of bones from a healthy source
  • 1 ½ gallons of pure filtered water
  • 1 cooking onion, chopped
  • 2 carrots, peeled and chopped
  • 2 stalks of celery, washed and chopped
  • 1 teaspoon sea salt
  • 1 bay leaf
  • 3 garlic cloves
  • 1 bunch of fresh dill or parsley

Directions

  1. Preheat oven to 350 F. Place bones in roasting pan and roast for 30 minutes.
  2. Once roasted, place the bones in a large stock pot and pour water over the bones.
  3. Add the onion, carrots, celery, sea salt and bay leaf to the pot.
  4. Bring the broth to a boil and once boiling, reduce to a simmer.
  5. Remove any impurities at the top with a strainer.
  6. During the last 30 minutes, add the garlic and dill/parsley.
  7. Remove from heat and let cool slightly. Strain using a fine metal strainer to remove all the bits of bone and vegetable. When cool enough, store in a gallon size glass jar in the fridge for up to 5 days, or freeze for later use.

Serves 18-20

Teriyaki salmon

Ingredients:

  • â…“ cup soy sauce or tamari
  • 2 tablespoons filtered water
  • 1 tablespoon honey, melted
  • 3-4 garlic cloves, minced
  • 1 tablespoon fresh ginger root, grated
  • 1-2 scallions, thinly sliced
  • 4 (5oz) wild salmon filets with skin

Directions:

  1. Preheat oven to 400 F.
  2. In a bowl, add soya sauce, water, honey, garlic, ginger and scallions. Whisk together until combined.
  3. Place salmon skin side down on parchment lined baking sheet.
  4. Spoon teriyaki sauce over each piece of salmon.
  5. Bake salmon for about 20 minutes, until opaque and flakey.
  6. Remove from oven and serve warm.

Serves 4

Healthy apple crumble

Ingredients:

  • 5 organic apples, thinly sliced
  • 2 tablespoons raw honey or maple syrup
  • ½ lemon, juiced
  • 1 cup organic rolled oats
  • ½ cup almond flour
  • ¼ cup coconut sugar
  • 1 ½ teaspoons cinnamon
  • 4 tablespoons melted coconut oil or extra virgin olive oil
  • 1 can of organic coconut milk
  • 1 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350 degrees F and spray a 9-inch pie plate with coconut oil spray.
  2. Combine apple, honey/maple syrup and lemon juice in a medium bowl and mix together. Transfer to pie plate.
  3. In a separate bowl, combine rolled oats, almond flour, coconut sugar, cinnamon, and coconut oil.
  4. Sprinkle crumble mixture over the top of apples.
  5. Bake for about 40 minutes, until apples are of desired softness. If after 40 minutes, crumble topping is browning, but apples are not soft enough- place tin foil over the crumble and bake another 5-10 minutes.
  6. Allow to cool slightly before serving.
  7. While cooling, add coconut milk and vanilla extract into a large bowl and use electric mixer on medium-high speed until resembles whipped cream.
  8. Top pie with a dollop of whip cream and serve.

Serves 10

6 Tips to Boost Immune System

  1. Up your probiotic – Add fermented foods into your diet such as kimchi, kombucha, yogurt, or kefir to increase the healthy bacteria in your gut.
  2. Get a lymphatic massage or use a dry brush daily – The lymphatic system is a major part of the body’s immune system so give it some extra love with these effective techniques.
  3. Get plenty of zzzzz’s– Sleep is essential for a healthy immune system so get in bed a half hour earlier than normal and maximize those zz’s!
  4. Reduce your sugar – White, refined sugar suppresses the immune system response so reduce sugar wherever possible.
  5. Increase your exercise – Regular exercise is so important and helps to boost your immune system. Aim for 3 to 5 days of exercise each and every week!
  6. Incorporate vitamin C – Add vitamin C, through foods or supplementation, to boost immune system in preparation for cold and flu season. Oranges, dark green leafy greens and peppers are all great sources of vitamin C.
