It's the season of change and transformation! With October comes rich colors and healthy, hearty comfort foods such as apples, pumpkins, squash and sweet potatoes. With these abundant foods available, we have filled this newsletter to the brim with healthier fall recipes the entire family will enjoy. Breast Cancer Awareness Month

October is national breast cancer awareness month, which is an annual campaign to increase awareness of the disease. There are about 1.38 million new cases of breast cancer each year, both in developed and developing countries. There are several products available where part of the proceeds will go towards supporting cancer research and helping to teach women about early detection.

Spicy toasted tomato marinara on zucchini noodles


  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onions
  • 3 medium tomatoes
  • 2 pints cherry tomatoes
  • Sea salt and pepper to taste
  • 2 tablespoon dried oregano
  • 1 16-ounce can organic tomatoes, diced
  • 1 can tomato paste
  • 10 leaves of fresh basil, chopped
  • 2 garlic cloves, pressed
  • 1 teaspoon red chili pepper flakes
  • 4?5 medium zucchini, peeled and spiralized
  • 4 cups baby spinach
  • 1 tablespoon dried oregano
  • 2 tablespoons pine nuts
  • 2 tablespoons Parmesan cheese


  • Pre-heat oven to 400 F.
  • Line a large baking sheet with parchment paper and brush with olive oil. Cut onions and chop tomatoes and spread on baking sheet with cherry tomatoes that are sliced in half. Season with sea salt, pepper, and oregano and roast for 25-30 minutes, or until tomatoes are blistered.
  • While roasting, add diced tomatoes from can, tomato paste, basil, garlic, red chili flakes, and oregano into a small saucepan
  • Bring sauce to a boil and then reduce to a simmer and cover, allowing it to cook for about 20 minutes. Add water as needed to thin is desired.
  • While vegetables are roasting prepare zucchini noodles with spiralizer or vegetable peeler by removing skin and chopping off the ends.
  • Add spinach and a splash of water to a nonstick pan and heat on medium high until the spinach leaves are wilted. Drain excess water, place in a bowl, and set aside. Using the same pan, lightly cook the zucchini noodles by adding to pan and sautéing for about 2-3 minutes, until noodles have softened slightly.
    Put all ingredients into bowl, add pine nuts and sprinkle with parmesan cheese if desired. Enjoy! 
    Serves 3

Fall harvest soup


  • 2 tablespoons extra virgin olive oil
  • 3 medium carrots, diced
  • 1 large yellow onion, diced
  • 2 large zucchinis, halved
  • 2 medium cloves garlic, minced
  • 2 cups peeled butternut squash (approx. small squash) cut into 1/2-inch cubes
  • 1/4 teaspoon ground allspice
  • Pinch cayenne pepper
  • 1 teaspoon Kosher salt
  • 4 cups low sodium chicken or vegetable broth
  • 1 15-oz. can diced tomatoes
  • 4 sprigs fresh thyme
  • 2 cups lightly packed kale, coarsely chopped
  • 1 15oz. can of chickpeas


Heat oil in a large soup pot over medium-high heat. Add the carrots, onion and zucchini and cook, stirring occasionally, until they begin to soften, about 6 minutes.
Add the garlic and cook for about a minute more. Add the squash, allspice, cayenne, and salt and stir to combine. Pour in chicken or vegetable broth, tomatoes with their juice, and thyme. Bring to a boil, reduce the heat to medium, cover, and simmer for 10 minutes.
Add the kale and the chickpeas and cook uncovered until the squash is tender and the kale has wilted approximately 10 minutes. Discard the thyme springs before serving. Season to taste with salt and cayenne if desired.

Nutritional Analysis: calories 243, fat 9g, carbohydrates 36g, fiber 9g, protein 10g

Crockpot pumpkin chili


  • 1 lb lean ground turkey or chicken
  • 2 tablespoons extra-virgin olive oil
  • 1 medium onion, chopped
  • 1 medium red pepper, chopped
  • 1 medium green pepper, chopped
  • 2 garlic cloves, finely chopped
  • 1 15-oz. can diced tomatoes
  • 1 15-oz. can pumpkin puree
  • 1 15-oz. can kidney beans rinsed well and drained
  • 1 15-oz. can chickpeas, rinsed well and drained
  • 2 cups low sodium vegetable broth
  • 1 tablespoon chili powder
  • 1-2 teaspoon ground cumin
  • Sea salt and ground pepper to taste


In a small saucepan, cook the ground turkey or chicken until it breaks apart easily.
Add turkey, onion, peppers, garlic, diced tomatoes, pumpkin puree, kidney beans, chickpeas, vegetable broth, chili powder, cumin and salt and pepper into crockpot.
Mix everything together and cook on high for 3-4 hours or low for 5-6 hours.
Serves 6

Nutritional Analysis: calories 250, fat 11g, carbohydrates 19g, fiber 6g, protein 20g.
