Let's keep mom hydrated!

Happy water

Light and crispy chicken Parmesan with zucchini noodles


  • ¼ cup spelt or whole wheat breadcrumbs
  • 2 Tbsp parmesan cheese
  • 1 egg
  • 2 4oz organic chicken breasts
  • 4 large zucchinis
  • 1 cup tomato sauce


Preheat oven to 350F.
Line baking sheet with parchment paper and set aside.
Combine breadcrumbs and Parmesan cheese (reserve some for sprinkling) in a bowl and mix together. 
In side bowl, whisk egg. Dip chicken breasts into egg mixture and coat completely. Then dip into the breadcrumb mixture, coating both sides and lay on prepared baking sheet. 
Put in oven for 10 minutes and remove. Flip chicken over, add sauce onto both pieces of chicken and sprinkle with reserved parmesan cheese. Put back into oven for 10 more minutes until cooked through. 
When chicken is in the oven, spiralize zucchinis (can use a Spiralizer or a julienne peeler) and sauté for 3-5 minutes until soft. Add some tomato sauce before serving.
Once chicken is cooked, add on top of zucchini noodles and serve while hot!

Nutritional Analysis: 360 calories, 10g fat, 34.8g carbohydrates, 10g fiber, 14g sugar, 37g protein

Edamame quinoa bowl


  • 1 cup quinoa
  • 2 cups water
  • ¼ tsp salt
  • 1 cup red cabbage, chopped
  • 1 cup unshelled and cooked edamame
  • 1 red pepper, chopped
  • ½ cup carrots, shredded
  • 1 cup cucumber, diced


  • ¼ cup tamari or low sodium soya sauce
  • 1 Tbsp sesame oil
  • 1 Tbsp rice wine vinegar or white wine vinegar
  • 2 Tbsp green onions, chopped
  • ¼ cup cilantro, chopped
  • 1 Tbsp sesame seeds
  • ¼ tsp ginger, grated
  • 1/8 tsp red pepper flakes
  • Sea salt and pepper to taste


Add water, quinoa and salt to a medium saucepan and bring to a boil over medium heat. Once water has boiled, turn the heat to low and simmer for about 15 minutes or until the water is absorbed. Remove from heat and fluff with a fork. 
Place the cooked quinoa in a large bowl and add the cabbage, edamame, red pepper, carrots, and cucumber. Set aside. 
In a small bowl, whisk together the tamari, sesame oil, vinegar, green onions, cilantro, sesame seeds, ginger, red pepper flakes and salt and pepper.
Pour the dressing over the quinoa salad and stir to combine.
Serves 4

Nutritional Analysis: 332 calories, 11g fat, 40g carbohydrates, 8g fiber, 3g sugar, 17.5g protein

Raw cocoa and date smoothie


  • 1 scoop of protein powder
  • ½ banana
  • 1 tsp unsweetened cocoa
  • 1 Tbsp chia seeds
  • 3 medjool dates, pits removed
  • 1 cup unsweetened almond milk
  • 2-3 ice cubes


Add all ingredients into blender and blend until smooth
Serve while chilled 
Serves 1

Nutritional Analysis per skewer: 370 calories, 15.4g fat, 30g carbohydrates, 13.5g fiber, 8.2g sugar, 30.4g protein

    Dark chocolate is relaxing, has anti-inflammatory properties and releases endorphins our happy hormones! Opt for 75% or higher cocoa content for a treat your mom can't resist.
  3. A good night's sleep 
    There is no better gift you can give than the gift of a good night's sleep (I hope my daughter is paying attention to this). Let your mom go to sleep early or have a well desired sleep in while you tidy the house!
  4. A basket of organic fruits and vegetables 
    Make your own organic basket with mom's favorite fruits and veggies. You can even add a coupon for 1 home cooked meal made by you.
