RECIPES WE LOVE!
Ingredients:
- 4 cups water
- 1 cup steel cut oats
- 2 medium apples (red or green)
- 1 tsp cinnamon
- 1 Tbsp brown sugar
- 3-4 Tbsp hemp hearts
Directions:
In a medium sized pot bring 4 cups of water to a boil.
Stir in the steel cut oats and bring to a boil for 5 minutes.
Reduce heat and simmer for 30 minutes, stirring occasionally
Peel and core apples and cut into cubes
After oatmeal has simmered for 10 minutes add in apples, cinnamon, brown sugar and sprinkle hemp hearts!
Serves 4
Nutritional Analysis: 177 calories, 4g fat, 25g carbohydrates, 6g fiber, 10g sugar, 6g protein
Roasted red pepper and goat cheese salad
Ingredients:
- 2-3 cups of mixed greens
- 2 large red pepper
- 2 Tbsp soft goat cheese
- 2 Tbsp extra virgin olive oil
- 1 Tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- Salt and pepper to taste
Directions:
IPut mixed green into serving bowl.
To roast red peppers: pre-heat oven to broil, wash and cut the peppers in half, remove seeds and place face down on a baking dish.
Broil for 20 minute, and once skin is blackening, remove from oven.
Once cooled, peel the skin off.
Cut roasted peppers into strips and add onto lettuce. Crumble goat cheese over salad.
In a small side bowl, add olive oil, balsamic vinegar, Dijon mustard, honey, and salt and pepper. Whisk together into well combined.
Drizzle over salad, toss well and serve!
Serves 2
Nutritional Analysis: 370 calories, 18g fat, 12g fiber, 12g protein
Hearty Chicken Stew
Ingredients:
- ½ Tbsp extra virgin olive oil
- 1 small onion, finely chopped
- 1 L low sodium chicken broth
- 1 small sweet potato (or ½ a large one), finely grated
- 2 garlic cloves, minced
- ½ Tbsp fresh thyme leaf
- 1 tsp fresh rosemary leaves
- Pinch of sea salt and pepper
- 8 skinless chicken thighs
- 3 carrots, peeled and cut into chunks
- 1 leek, well washed and thickly sliced
Directions:
Heat oil at high heat in a large pan. Add onions for a couple minutes, until soft, then pour in the stock and stir in the sweet potato and herbs.
Add the chicken and bring to the boil. Stir in the carrots and leeks, cover the pan and leave to simmer on a low heat for 40-45 minutes, stirring occasionally, until the chicken is tender.
Serve while hot!

TOP 5 WAYS TO BOOST YOUR IMMUNE SYSTEM
