DR. JOEY'S FEATURED FOOD – Goat's Cheese

We love goat's cheese for all the nutrition and benefits it has to offer.

Not only is it higher in protein and lower in fat and calories compared to other cheeses, it has a distinct flavour and texture that keeps us coming back for more. In addition to its nutritional benefits, this cheese is much more easily digestible since it contains smaller fat globules than other cheese products.

People who are lactose intolerant may find that they can digest and tolerate goat's cheese!

RECIPES OF THE MONTH

Beet and Goat's Cheese Salad

Ingredients:

  • 4 cups of spinach leaves
  • ¼ red onion, thinly sliced
  • ½ cup beets, steamed
  • 1 tbsp balsamic vinegar
  • 1 1/2 tbsp olive oil
  • 1 pinch salt
  • 1 pinch pepper
  • 3 oz goat cheese
  • 2 tbsp walnuts

Directions:

Combine fresh spinach leaves, onions, and steamed beets in a large bowl
Toss with balsamic vinegar and olive oil, season with a pinch of salt and pepper.
Divide salad amongst two plates and top each salad with half of the goat cheese and walnuts. 
Makes: 2 servings.

Calories (per serving): 293, Protein: 12g, Carbohydrates: 10g


Tomato Soup with Goat's Cheese

Ingredients:

  • 1 tbsp butter
  • ½ cup diced onion
  • ½ cup diced celery
  • 1 tbsp flour
  • 2 cups low-sodium chicken broth
  • 2 cans (each 28 oz/796 mL) crushed tomatoes
  • 2 tbsp chopped fresh basil
  • ½ tsp salt
  • ½ tsp pepper
  • 1 oz. of goat's cheese

Directions:

Melt butter in a nonstick skillet over medium-high heat
Sauté onion and celery until tender (about 3 minutes)
Add flour and continue to cook, stirring, for 1 minute
Slowly pour in chicken broth and whisk until completely blended
Empty crushed tomatoes into 4-quart (3.75 L) pot
Add contents of skillet along with basil, salt, and pepper
Bring to a boil, reduce heat, and simmer for 20 minutes
Allow to cool and purée in blender to create a smooth texture
Reheat top with goat's cheese.
Makes: 8 servings
Preparation time: 35 minutes

Calories (per serving): 98, Protein: 5g, Fat: 3g, Carbohydrates: 17g


Spaghetti Squash with Herbs and Goat's Cheese

Ingredients:

  • 1 spaghetti squash, cut in half
  • 1 tbsp. butter, softened
  • 2 tbsp. lemon pepper seasoning
  • 4 oz. of Woolwich Dairy Original Chevrai Goat Cheese
  • 1 tbsp. chopped fresh parsley
  • 1 tbsp chopped fresh chives
  • 1 tbsp. chopped fresh tarragon

Directions:

Preheat oven to 450 F
Cover each half of the squash with the softened butter and top with an even sprinkling of the lemon pepper seasoning. Bake for about 50 minutes until squash is a deep golden color.
After removing squash from the oven, scrape out the inside with a fork until the flesh resembles spaghetti pasta. Place the squash in a bowl and toss with the goat cheese and fresh herbs while still warm.
Divide the servings and serve immediately. Makes a great alternative to pasta.
Makes: 4 servings for a side
Preparation time: 60 minutes

Calories (per serving): 176, Protein: 7g, Fat: 8g, Carbohydrates: 22g
