Healthy Oatmeal Pumpkin Muffins Ingredients: 1 1/2 cups whole wheat flour 1 1/2 cups old fashioned oats 3/4 cup brown sugar 1 teaspoon baking powder 1/2 teaspoon baking soda 1 teaspoon cinnamon 1/2 teaspoon ground ginger 1/4 teaspoon allspice 1/4 teaspoon ground nutmeg 1 1/2 cups canned pumpkin 3 tablespoons canola oil 1 egg 1 egg white 1/4 cup milk 1/2 cup chopped pecans ½ cup raisins Directions: 1. Add whole wheat flour, old fashioned oats, brown sugar, baking powder, baking soda, cinnamon, ginger, allspice and nutmeg to a large bowl 2. Add pumpkin, oil, egg, egg white and milk to another large bowl and mix thoroughly 3. Add wet ingredients and dry ingredients together and mix well 4. Stir in pecans and raisins 5. Preheat oven to 375 degrees F and line muffin tin with muffin cups 6. Fill muffin cases evenly and bake for 18 to 25 minutes Makes: 14 muffins Preparation time: 35 minutes Calories (per muffin) 211, Protein 5g, Fat 7g, Carbohydrates 35g
